Howlin Chicken at Factory Food Court: Derby’s New King of Heat and Heart

Factory Food Court is quickly becoming one of Derby’s must-visit spots for proper street-food variety, and with so many great vendors under one roof, it takes something special to stand out. On my latest visit, that something was Howlin Chicken.

I walked in fully prepared to go straight for their chicken and waffles. It was the one thing I’d had my eye on for weeks. But when I got to the counter, the team told me they weren’t serving waffles that day because they still hadn’t perfected the recipe. And honestly, I respect that. There’s something refreshing about a vendor that won’t push out a sub-standard product just to tick a box. It told me immediately that they care-deeply-about what they serve.

So I kept it simple and went for the Howlin Box. Two tenders, waffle fries, Texas toast, ranch and a drink, all for £15. A proper meal. In fact, a massive meal. By the time I got to the last few bites I was genuinely struggling, and that’s not a complaint. It’s the kind of portion that reminds you Derby’s still got places that care about value as much as flavour.

The chicken tenders arrived hot, crisp and beautifully seasoned. Their signature spice blend carries a proper kick but balances it with a subtle sweetness that keeps you going back for more. I wouldn’t have minded them being even hotter-because I’m one of those spice fiends-but this level hits that perfect middle ground. Plenty of heat for those who like it lively, but not so intense that it scares off anyone who just wants good flavour.

The waffle fries were a strong supporting act: crunchy, not greasy, and ideal for scooping up any runaway crumbs and sauce. And then there’s the Texas toast. Thick, buttery, lightly fried-an underrated little treat that worked perfectly wrapped around a tender and dipped in the ranch. It’s one of those combinations you don’t realise you need until you try it.

Everything was fresh, everything was hot, and it only took around five minutes. Quick service without sacrificing quality, and not a single trace of oiliness in the box. Just clean, bold flavours and a genuinely satisfying plate of food.

Howlin Chicken delivered exactly what I hoped it would: flavour, fire and pride on a plate. Even without the waffles-still waiting for that perfected recipe-it’s an easy recommendation. Derby’s street-food scene is thriving, and this vendor is a standout for all the right reasons.
